Fairburn Farm is a multigeneration family farm on Vancouver Island, which operates free of chemical pesticides, antibiotics, growth hormones and anything genetically modified. In 1954 Molly and Jack Archer came across the vacant property and fell in love with it. The Archers were pioneers of conservation, and they farmed the land naturally, instilling a sense of true land stewardship in their children. They created the Vancouver Island Organic Cooperative, the first in Canada. The Archer’s son Darrel and his wife Anthea have carried on the same philosophy and hard work. The Archers imported Canada’s first herd of Water Buffalo in 2000 and they now have a thriving herd of magnificent animals. The Archers devote their energies to the operation of Canada’s first Water Buffalo Dairy, at Fairburn. About Water Buffalo MilkThe foundation for the healthy, delicious Natural Pastures Mozzarella di Bufala is the creamy, white milk provided by the Fairburn herd of water buffalo. Compared with cow’s milk, water buffalo milk is pure white, smoother, thicker and tastier; it contains less water and more solids. A composition analysis shows that water buffalo milk has 58% more calcium, 40% more protein, and 43% less cholesterol than cow’s milk. Water buffalo are a different animal than North American buffalo which are actually bison. Originally from Asia, water buffalo have been with humans since pre-historic times.
