Through the natural fermentation process of our mozzarella, the lactose is naturally reduced and even eliminated, making this cheese the perfect choice for those with lactose intolerance. Mozzarella also has one of the lowest caloric levels of all types of cheese.
Chef Darren Brown of the Fairmont Pacific Rim has said that, compared to cow’s milk mozzarella, Natural Pastures Mozzarella di Bufala “has a very firm bite to it but it melts after that, and you get a lot of creaminess.”
