All of our fresh water buffalo milk comes from stress-free, foraging Island herds, including the first water buffalo herd in Canada at Fairburn Farms in the Cowichan Valley.
Traditionally Water buffalo milk, which is thicker and richer than cow’s milk, is ideal for cheese production since it contains high milk solids. Cheese made with water buffalo milk is a graceful, pure, porcelain white.
Water buffalo milk contains more calcium and more protein than cow’s milk, high levels of tocopherol — a natural antioxidant — but less cholesterol, making it a healthy alternative. Because our milk comes from foraging buffalo, it also has high levels of conjugated linoleic acid (CLA). Water buffalo milk is also more tolerable for many people with cow’s milk allergy.
